Swiss, Spinach and Ham Pie
Yield: 6 slices
1 refrigerated ready-to-use pie crust
2 cups milk
2 eggs plus 4 egg whites
1 cup shredded Swiss cheese, divided
1 cup diced ham (about 4 ounces)
1 (10-ounce) package frozen chopped spinach (thawed & squeezed dry)
1/2 cup sliced scallions
1/4 teaspoon salt
2 small plum tomatoes, seeded and thinly sliced
Heat oven to 400 degrees.
Unfold crust and place in 9-inch pie plate.
Roll edges under and flute edge.
Prick pastry all over with fork.
Bake on cookie sheet for 8 minutes or until crust looks dry.
Cool on wire rack.
In a large bowl whisk milk, eggs and egg whites until blended.
Stir in 3/4 cup cheese, ham, spinach, scallions and salt until well-blended.
Pour into crust; top with tomatoes and remaining cheese.
Bake 20 minutes; reduce heat to 350 degrees; and
bake 40 to 45 minutes or until top is firm and crust is golden.
