Mexican Green Rice Casserole

1 and a half cups uncooked rice ~ cook and set it aside

Saute the following in 1 stick of butter:
1 green pepper chopped
2 poblano peppers, chopped
1 small green hot pepper, chopped (optional)
1 onion, chopped

Puree mix in the blender and then add
1 cup sour cream (I use no or low fat because I only cook with butter)

Grate a half pound Monterey Jack Cheese

In a 1 and a half quart casserole, layer half of each ingredient as follows:
Rice
Pepper-sour cream mix
Grated cheese
Repeat layers and top with cheese

Bake at 350 for 20-30 minutes or until the cheese is melted.
