Spinach, Mushroom, Seafood, Stir-Fry
Yield: 2 Servings
1 small bunch (2 or 3 cups) fresh spinach leaves (OR kale)
2 cups mushrooms
1 small bunch green onions, cut in 2-inch lengths (6-8 onions)
1 can bamboo shoots, drained and rinsed
6 or 8 large, peeled shrimp OR sea scallops, OR 1/2 cup cubed fish filet
1 clove garlic, minced (if using fish)
1/2 teaspoon fresh grated or ground ginger
1/2 teaspoon Cajun Magic seafood seasoning (if using fish)
1/2 teaspoon vinegar OR lemon juice OR 1 teaspoon sherry wine
Salt & pepper to taste
1 teaspoon salad oil
Rinse and tear spinach OR kale leaves into bite-size pieces.
Drain well on paper towels.
Peel and devein shrimp (if using shrimp).
Sprinkle whatever fish you're using with garlic and Cajun Magic seafood seasoning.
Heat oil in skillet, add shrimp, mushrooms and onions, and stir-fry 1 1/2 minutes.
Add bamboo shoots, spinach OR kale; sprinkle ginger over all, and stir-fry another 30 seconds.
Add vinegar, lemon juice OR sherry.
Stir well 15 seconds, taste and adjust seasoning and serve.
