Yield: 2 Servings

1/2 chicken breast, skinless, cubed
2 cups sliced fresh mushrooms
2 medium onions, sliced
2 stalks celery, thin sliced
1 carrot, coarsely grated
1/2 to 1 cup fresh bean sprouts
1 cup thin sliced bok choy
1/4 teaspoon sesame oil
1 teaspoon salad oil
1 teaspoon grated fresh ginger (or 1/2 teaspoon ground)
1 clove garlic, crushed
3 whole star anise pods (if desired)
1 teaspoon lite soy sauce diluted with 1 tablespoon water
1/3 to 1/2 packet sugar substitute

Mix together soy, water, ginger and sugar substitute, drop in star anise pods.

Heat salad oil in skillet, shaking to coat.

Add garlic, cubed chicken, celery and onions, and cook, stirring for 2 minutes.
Add carrots, mushrooms and bok choy, and stir fry another 1 1/2 minutes.
Add bean sprouts and soy mixture, and cook 1 minute more.

Taste and adjust seasoning.
